Default format is not equal to only format: there are two common formats, and they are RTF and ODT. We have both of them working great, and just about every other format you can think of. Oh, and double-clicking the document should just work and open the program you created it in, that has always worked

I know this, but my point is that because every word processor sees fit to create its own file format, I can end up opening one of perhaps three different word processors when I click on an icon.
By contrast, the average Windows box only has one WP installed and all ‘documents’ default to it.
The end result is that it feels a lot more simple in Windows. To be fair, really all I’m doing is repeating that tired old “Waaaah! Linux gives me CHOICES! I can’t handle choice!” moan.

Fair point. However, most users I’d guess will only have one word processor installed, even on Linux. The exception would probably be if the distro installs OO.o and the user chooses to install AbiWord because they prefer it, then it becomes a battle within the MIME type database as to who opens it. I usually solve this problem by just removing OO.o
To be truly fair, the same situation could happen in Windows too, but Windows users are much, much less likely to have more than one word processor since their computer either came with Works or Word, or they probably paid a lot of money for Office. Windows users in general are less accustomed to having a lot of free choices competing on their merits.
